The Process Behind What’s in the Tin
First harvest
Top leaves are picked during the first spring harvest April to may, when the plant has maximum nutrients.
Shading
Plants are covered under canopies for 20-30 days before harvest. This blocks the sunlight, slows growth and forces the leaf to produce high levels of Chlorophyll (vibrant colour) and L-theanine (natural sweetness and calm focus).
Stem and Vein removal
All stems and tough veins are stripped away during processing, leaving only pure leaf flesh (tencha) to be milled.
Stone-ground milling
The leaves are slowly ground using traditional granite stone mills. This prevents heat friction, preserving the delicate aromatics, bright green colour and silky texture.
How to whisk it right.
Four small steps stand between this tin and a proper bowl of matcha — skip one and it shows in the cup.
Warm the bowl
Rinse your chawan with hot water, then dry it — matcha turns gritty against a cold surface.
Sift & measure
Sift 2g (about half a teaspoon) through a fine mesh to break up clumps before it meets water.
Add water, whisk in a W
Pour 60ml water at 80°C. Whisk briskly back and forth in a zigzag "W," not a circle, until a fine foam forms.
Serve within a minute
Matcha oxidizes fast — drink it right after whisking, while the foam still holds.
